MDBD - Blackberry Chocolate Sandwich Cookies

This recipe for Blackberry Chocolate Sandwich Cookies from Happy Food Health Life was made on October 12, 2013. This was a recipe I was really looking forward to making, but I didn't feel like met my expectations. Scott liked it more than I did, which is surprising since he isn't the biggest fan of chocolate.

Blackberry Chocolate Sandwich Cookies

Our Ingredients
 
INGREDIENTS:
Cookies
3/4 cup butter
1 1/2 cup brown sugar
2 Tablespoons water
1 (12 ounce) package semi-sweet chocolate chips
2 eggs
3 cups all-purpose flour, sifted
1 1/4 teaspoons baking soda
1 teaspoon salt 

 Cream Filling
3 cups powdered sugar, sifted and divided
1/3 cup butter, softened
3/4 cup fresh blackberries, pureed in a food processor 

INSTRUCTIONS:
Preheat oven to 350 degrees F.
Heat butter, sugar, and water in a large saucepan over low heat. 
Add chocolate chips and stir until melted.

Add dry ingredients and beat in eggs.

The dough has a very interesting texture
Drop by teaspoon onto cookie sheet. 
 Bake for 10-14 minutes. 
 
Cream Filling
Puree blackberries in a food processor.
 
Blend 1 cup powdered sugar with butter. 
Beat in remaining powdered sugar and blackberry puree alternately. 
(Use your judgement and don't add all the puree at once. You want the filling to be able to hold it's thickness. More puree will make it thinner. More powdered sugar will make it thicker)
 After cookies have cooled, sandwich 2 cookies together with cream filling.

I included the original source picture because it look so good.
Now I was not a huge fan of the blackberry puree. It tasted too much like powdered sugar to me. Scott thought it was good and even better the next day when he took them to work. I didn't mind the cookies by themselves, but they were nothing to write home about. This recipe probably will not make the Pinterest "Things I Tried That Turned Out Ok" board
