MDBD - Peanut Butter Cookies

This past weekend's MDBD was a departure from the norm. Typically we pick a recipe from Pinterest to experiment with; however, this week we were experimenting more with baking tools. My mother-in-law gave me the coolest electric cookie press for my birthday, so I was dying to give it a shot.


I only remember using a cookie press once in my life. I bought one from Pampered Chef and used it one time. It was such a pain to use and I just didn't have the strength to squeeze a bunch of cookies out of it. I didn't even know they made electric ones. It's pretty cool. Just plug it in and charge it for a couple of hours, unplug, stuff your dough in, push a button, and ta-da you have a cookie. It's so simple, even a two year old can use it. (Okay, technically, I had to help her hold the button down for the right amount of time).


We made classic peanut butter cookies using the recipe that was in the instruction book that came with the cookie press.

Peanut Butter Cookies
Our Ingredients
 1/2 C Shortening
1/2 C Peanut Butter
1/2 C Sugar
1/2 C Brown Sugar
1 Egg
1 1/4 C Flour
1/4 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp Salt

Let's get to baking!!!

Instructions
Mix shortening, peanut butter, sugar, brown sugar, and egg
Blend in the flour, baking soda, baking powder, and salt
With star plate form 2 1/2 inch fingers (I had no idea which was the star plate, so I just made random cookie shapes to try all the disks out)
Bake 8-10 minutes at 375 degrees

     1= Throw Directly in the Trash
     5= Not Bad, but Not Great
     10= Best Thing I've Ever Eaten

Kristin: 5 (Goof, but nothing special)

Scott and I decided that I have  ruined normal run of the mill cookies because I have been making some pretty out there, and yummy ones lately (i.e. Milky Way Cookies)

Fun Cousin Time

I don't really remember close relationships with my cousins. We had fun together when we had family functions, and I remember that my cousin Vanessa went to New Kids on the Block with me, but we were never very close. However, the relationship between my nieces and nephews was super close when they were growing up and I always loved that. I have tons of amazingly great memories of them spending time together. Sadly, since my sisters are both WAY older than me (that's for you Tiff) and I had Zoey a little later in my life, there is a pretty significant age gap between Zoey and my nieces and nephews (plus the majority of them live in Utah). So I am always super happy when Zoey gets to spend some quality time with her cousins on Scott's side. This past week was one of those times.

On Saturday the Poe side of the family had a get together to celebrate the July birthdays in the family (Grandma Poe, Scott, and me). We had a very enjoyable cookout at Scott's cousin's house. Zoey got to hang out and play with her cousin Jack, who is two years older than her. She had a good time playing in his water table, which basically meant dumping water all over her head. She also enjoyed derailing his trains (Jack wasn't a huge fan of that). They worked out a system where he would send her carrots via one of his trains. Jack even taught her how to climb rocks.

On Sunday we had the Moran side of the family over to our house for my birthday. Scott's mom had his sister's kids, Neko and Robbie, for the week so Zoey got in some more good cousin time. We started with lunch at Red Robin and then back to our house, where Zoey and Robbie took naps, while Bev took Neko to the park.

Once the little ones had all gotten up from nap, we spent some fun time enjoying the pool in the backyard. We had filled it up earlier in the day, so it was a nice temperature. Scott was the only adult brave enough to join in on the fun, but the rest of us enjoyed sitting around watching the crazy fun. It reminded me so much of Shay, Brynden, and Trey when they were that age, as well as my dad sitting in the pool with them. I think we even had a pool very similar to the one we have now.

Once the kiddos had tuckered themselves out swimming, we set them up with Kung Fu Panda while Scott finished making the burgers and dogs.

The kids ate dinner at Zoey's table, which was a little small for the three of them. Zoey kept making them pay what Scott called the "cousin toll" which basically meant that she kept stealing the chips off of their plates. LOL!
The day ended with some extremely tired kids. I know at least Zoey slept like a log.

In addition to our weekend fun, we got together one more time before Neko and Robbie had to go back to Kentucky. We met up at the zoo for the afternoon. It was super hot, so we only made it through part of the zoo, but we saw most of North America and Asia. We got to see the polar bears, as well as the brown bears. The langurs were also acting crazy that day, which was a delight for Zoey.


Following our day at the zoo, we headed over to Chuck E Cheese for an evening of craziness. This was Zoey's second trip to Chuck E Cheese and while I think she had a good time, I think she needs to be just a little bit older to really enjoy herself. Neko and Robbie had a great time as well.



MDBD - Birthday Edition

I was very excited for last weekend's MDBD because I got to make myself a birthday cake!!!! Typically, when I decide what I'm going to make for MDBD I cater it towards Scott's taste. I do this primarily because it is my nature to try to please other people, but I also know he will be the one eating most of what is made. However, this means that I end up pinning a lot of deserts that I am drawn to, but that he wouldn't really enjoy (i.e. lots of chocolate). So the opportunity to make something for my taste, without having irrational guilt, was very exciting.

So what did I decide to do for my birthday cake? Better than Thin Mints Grasshopper Poke Cake from Something Swanky Can you say yummy sounding!!!!

Better than Thin Mints Grasshopper Poke Cake

Our Ingredients

1 chocolate cake mix + water, oil, eggs as listed on the box
1 - 14.5 oz can sweetened condensed milk
1 - 12.8 oz jar Hershey's Special Hot Fudge Sauce
1 - 10 oz package Keebler Fudge Mint Cookies (or Thin Mints, when in season)
1 - 16 oz container cool whip (I like lite)
1 Duncan Hines Mint flavor packet
1 cup Andes Mint chips
 
Instructions
 
Prepare and bake the cake mix in a 9x13 baking dish. Allow to cool completely.

Use the bottom of a wooden spoon to poke holes evenly across the entire cake (about 20 holes)
Pour the can of sweetened condensed milk over the cake, trying to fill the holes 
Heat the hot fudge sauce in a small bowl in the microwave (30-40 seconds) 
Crumble half of the fudge mint cookies into the hot fudge sauce and mix
 Spread the cookie/fudge sauce over the cake
In a large bowl, whisk together the mint packet and the cool whip
 Spread the whipped topping over the fudge layer.
Crumble the remaining cookie crumbs over top of the cool whip
Sprinkle the Andes Mint chips over top (I didn't end up using full amount)
Refrigerate and chill for at least 4 hours (overnight is best)

Scott: 8 (Surprisingly well balanced flavor. Mint not too overwhelming. Best when fresh and cookies are still crunchy)
